It's the simplest way to brew the best kombucha!

Boiling water in the same vessel that tea is brewed in ensures the environment is sanitary for the SCOBY and will result in the most consistent, best tasting kombucha. (During the boil transfer a cup or two of boiled tea through the bottom and side ports to ensure they are fully sanitized.)

Running cold water through the fermentor jacket after boil enables rapid cool down of tea. A quick stir (use a boiled spoon) or bubbling oxygen in the bottom port will ensure even temperatures throughout the tea before adding SCOBY.

Optional equipment: 

  • Water Chiller can be used to regulate/cool fermentation temperature, and crash the kombucha post-fermentation for serving
  • Dispenser can be connected directly to the fermentor for serving fresh, cold kombucha.

Note: The 240V system comes with a Tabletop Controller that plugs into a 240V NEMA 14-30 receptacle and can be used to heat during fermentation by turning the output knob down to 3%. 

Note: When serving directly from the fermentor, after removing the pellicle, seal the lid (always use the pressure/vacuum relief valve) and add 3-5psig of CO2. See this article on how to carbonate in the BREWHA fermentor.
